Vegan Creamy Onion Soup

This is a very comforting dish, it is rich and fulfilling but it is not too heavy.
The creamy texture of this soup along with the sweetness of the onion is just a perfect combination for the chilly days of fall.

Prep time: 10 min.
Cooking time: 40 min.
Difficulty: simple Servings: 10 ppl.

 

Tools: Ingredients:
  Instructions:
  1. Prepare the onions -  Peel all the onions and wash well before cutting. Cut the onions to thin slices.
  2. Heat a large pot and pour the olive oil in. Add the onions and saute until the onion becomes transparent and fragrant.
  3. Add the minced onion and ginger. cook for 3 more minutes.
  4. Add the water and the spices, cover the pot and keep cooking for 30 minutes..
  5. Check the taste and add the white wine if you want, fix seasoning.
  6. Blend well until the texture is smooth. If the soup is too thick, add a little water until you get your preferred texture.
  7. Garnish with fresh parsley.  Serve with garlic croutons.
  8. Enjoy!
