Vegan Caesar salad with Homemade Dressing

My absolute favorite salad ever. Everyone who knows me, knows that there is nothing I really rather have than a good Caesar salad, One with fresh, crispy romaine hearts, and perfect Caesar dressing. 
If you got good lettuce and good dressing, everything else is a bonus! I like to add tomatoes, onions, croutons, parmesan, and sometimes even faux chick'n (a habit left over from my older days), but honestly all you need is the dressing.
I have tried my share of vegan store-bought Caesar dressings and a few different recipes. I have never really felt like it is as good as the original, I used to love. This time is different! This dressing is so so so good.

Romaine
Romaine lettuce is a low-calorie (only 8 calories in a cup), and nutritious food that contains a number of important vitamins and minerals, such as Vitamins C, K, A, Calcium , and others.


Raw Red onion
Onions are low in calories yet high in nutrients, including vitamin C, B vitamins and potassium. Red onions are also known to have anti-bacterial qualities and has been linked to reduction of risk factor for certain types of cancers. They are also colorful and so so flavorful!


Chia
Although the chia seed is so tiny, it is one of the most nutritious foods on the planet. The seeds re loaded with fiber, protein, omega-3 fatty acids and various micronutrients. Chia is literally 14% protein, which is crazy!

Whenever I go into the kitchen, whether it is for cooking or baking, I need to have my music with me. I thought it would be nice to share with you the exact song that describes my feeling towards each recipe. That way you can have a similar experience while cooking...

Prep time: 15 min.
Baking time(croutons): 20 min.
Difficulty: simple Servings: 6 ppl

Za'atar Coroutons:

Vegan Caesar Dressing:

 Instructions:
  1. Prepare the croutons - Preheat oven to 380 F.
  2. Cut the bread up to cubes, mix them in a bowl with the olive oil and the Za'atar. Spread them evenly on an oven tray, lined with baking paper.
  3. Bake for 10-15 minutes on the top wrack, flipping them mid-bake.
  4. Remove the croutons from the oven and let them cool down to room temperature.
  5. Prepare the dressing: Place all the ingredients in the blender and blend well until smooth. Taste and fix seasoning according to personal taste (I find the capers add enough salt but my husbad disagreed and added more...:))
  6. Prepare the salad: Cut up your washed romain lettuce, I like to tear it by hand, but a knife would work just as well.
  7. Cut the tomatoes into large cubes (cut the cherry tomatoes in half if using them), add sliced onions.
  8. Pour your prepared dressing on your salad and mix well.
  9. Add the croutons and the Parmesan and toss it a little bit.
  10. Optional: Add homemade chick'n seitan (recipe coming soon) or store-bought meatless chicken.
  11. Another option is to add a tbsp of capers to the salad.
  12. Enjoy!
