Vegan Spaghetti and Meatballs in Red Sauce
Vegan spaghetti and 'meatballs' in red sauce
I just love this one, it has all the things that make for a comforting and satisfying dish. The balls themselves are very easy to make, they are packed full of protein and fibers and they are very good at absorbing any flavor you like to give them.
Originally I have made this recipe because someone had asked for a meatballs recipe that is soy-free, I added the soy sauce because that's how I make it at home but it is very easy to substitute it (see variations)
The chewy texture of the 'meat' balls along with the tartness of the red tomato sauce compliment the soft texture of the pasta perfectly.

Pistachios are a great source of healthy fats, fiber, protein, antioxidants, and various nutrients, including vitamin B6 and thiamine. Plus, hey are absolutely delicious.
Lentils
Lentils are a very good source of various vitamins, iron, magnesium, potassium and zinc. They are also an excellent source of protein and fiber. Lentils are also very versatile, very easy to cook and can be a base for so many different dishes.
