Tahini is highly, highly nutritious, it is rich in healthy fats, vitamins, and minerals. Tahini is also full of antioxidants, has anti-inflammatory properties, and is also known for help with prevention of diabetes.

Beets has one of the most beautiful, natural colors, they literally make every dish pop. Beets are also full of vitamins and minerals and they are low in calories and fat. They are extremely high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need. Beets have been proven to help improve athletic skills and, decrease the risk for hearts disease.

I love using fresh parsley, I love it's smell, I love the taste and I love the benefits of fresh organic parsley - It is a low-calorie, nutrient-dense herb. It’s particularly rich in vitamins K, A, and C.

Whenever I go into the kitchen, whether it is for cooking or baking, I need to have my music with me. I thought it would be nice to share with you the exact song that describes my feeling towards each recipe. That way you can have a similar experience while cooking...

This recipe is so fresh  and full with beautiful colors, and it just makes me think of this song Color My Life by Chicano Batman

Let's start:

Prep time: 20 min.
Baking time: 30 min.
Resting time: 30 min.
Difficulty: simple Servings: 12 skewers

Beet Seitan:

Kebab mixture:

  1. Prepare the Beet Seitan: Blend the raw beet with water until smooth.
  2. Transfer the beet mixture to a large mix bowl, add the rest of the ingredients of the seitan and knead with your hand until the mixture is blended well.
  3. Leave the seitan to rest for 30 minutes.

  1. Prepare the kebab: Preheat the oven to 380 F.
  2. Place all the ingredients for the kebab in a mixing bowl, and using your hands, mix everything together.
  3. Make sure to really insert all the ingredients and separate the seitan, so all ingredients form a unified well-spread, dough-like mixture.
  4. Cut the mixture to 12 balls and place on the skewers, press each ball to give it an elliptical shape.
  5. Line a baking tray with baking paper, place the net cooling rack on top of it, and spray just a little bit of oil on it (optional, but helps to remove the seitan easily).
  6. Roast in the preheated oven for 15 minutes, turn upside down and roast for another 15 minutes.
  7. If you want the sides of the kebab to get that nice roasted look, you can turn on the oven broil function for 1-2 minutes extra.
  8. Serve hot with a side of parsley tahini.
  9. Enjoy!
