Vegan Raw Almond Marzipan

Meet my all time favorite sweet. I have always loved marzipan, even when I was very young. I know a lot of people think of it as an "old people's treat" here in the states, but I strongly disagree.

When I was younger, my dad spent some time working in Austria, I used to see little animal-shaped, or fruit-shaped marzipan treats everywhere, and I wanted them all! 

I truly believe that chocolate covered marzipan make for the perfect candy, nobody can convince me otherwise :)

Bottom line - marzipan is awesome! Try it if you haven't, try again if you have :) It is worth it...

Almonds

Almonds are delicious, they are high in healthy monounsaturated fats, fiber, protein and various important nutrients.

Whenever I go into the kitchen, whether it is for cooking or baking, I need to have my music with me. I thought it would be nice to share with you the exact song that describes my feeling towards each recipe. That way you can have a similar experience while cooking...

Purple Wildflour Vegan Bakery

Let's start:

Prep time: 15 min.
Baking time: No bake
Difficultysimple Servings: 1.5 lb approx.

 

Tools:
  • Food processor
  • Plastic film
  • Molds (optional)
Ingredients:
  • 2 2/3 cups (440 g) crushed almonds (I crush my own but you can buy it crushed)
  • 2 1/3 cups (270 g) powdered sugar
  • 2 tsp of pure vanilla extract
  • 5 tbsp of aquafaba.
 Instructions:
  1. If the almonds are not yes crushed/ground, crush them now until very finely crushed.
  2. Add the rest of the ingredients to the food processor and blend until smooth. Remove the Marzipan from the foo processor to a clean surface. If the marzipan is still a little wet, you can dust the surface with a little powdered sugar.
  3. Create a sausage like shape with the marzipan, make sure to squeeze the marzipan while shaping it, to prevent air bubbles. 
  4. Wrap in plastic film and place in the fridge to set.
  5. If you want the make the marzipan into shapes, you can place it in the mold before it is set.
  6. Enjoy!

 Notes:

*  Usually marzipan color is white. My marzipan is brownish, that's because I used raw natural almonds (not blanched), but the recipe is exactly the same if you choose to use blanched almonds.
