Vegan Banana Bites Cookies

Love these little banana cookies.
We got extra bananas in our delivery service a few days ago, and I am not one to let any of them go to waste 😊

So we made these delicious little banana bites, and they are so good ❤️
My son and I enjoyed making them together, it is very simple, try it for yourself.

Spelt Flour
 Spelt is a type of ancient, whole grain that is related to wheat. The nutrition value is very similar to that of common wheat, but there are still some differences. Spelt flour is more nutritious as it contains milled bran and the germ (except for the endosperm), and higher content of some minerals. Whole spelt is very high in fiber, protein and essential nutrients as iron or zinc. The carbs intake is also very high and should be considered when consuming any wheat products.

Almond flour 
Almond flour is incredibly tasty and nutritious. It is particularly rich in vitamin E and magnesium so it adds a nice nutritional value to a sweet and delicious breakfast. Almond flour is also low in carbs yet high in healthy fats and fiber which is better for you blood sugar. It is a great alternative for gluten-free baking.
 
Coconut sugar
Coconut sugar is the dehydrated sap of the coconut palm. It is very sweet and has a bit of a nutty aroma to it, it is not as processed as white sugar and therefore maintain a few of the coconut fruit's nutrients. 
A few examples of these nutrients are the minerals iron, zinc, calcium and potassium, along with some antioxidants. Coconut sugar also contains a fiber called inulin, which slows glucose absorption and this is why some people with glycemic restrictions can eat it.Purple Wildflour Vegan Bakery

Tools: Ingredients:
 Instructions:
  1. Preheat the oven to 350 F.
  2. Line a baking sheet with baking paper.
  3. In the mixing bowl, place the bananas and smash them using a whisk. When the banana turns into a spread-like texture, whisk in the sugar, the oil, and the vanilla extract.
  4. In a different bowl, sift the flours into the bowl. Add the baking soda on top of the flour and mix well using your spatula.
  5. Mix the dry ingredients with the wet ingredients, don't over mix the batter.
  6. Make around 1.5 inch balls (using a piping bag or a spoon). 
  7. Bake in the oven for 12 minutes.
  8. Let the cookies cool down completely before moving them from the sheet.
  9. Enjoy!

1. Flour content - The pelt flour can easily be changed into most brands of flours. (all purpose, whole , gluten-free blend) For a gluten-free option- substitute the spelt flour with a gluten-free flour blend:

  1.  140 g gluten free flour mix
  2.  70 g gluten free flour mix+70 g almond flour
