Vegan Pistachio and Walnuts Holiday Cake

Pistachio and walnuts holiday loaf 
 If you are looking for a new cake idea for this holiday season, this is my contestant 💜
I am a big fan of pistachios, raw/ salted/ caramelized, anyway you eat them, they are so good.
I even made a cheese out of them once.
This beauty is a festive pistachio cake with whole roasted walnuts on top. The walnuts add a nice crunch and a tempting nutty aroma...
It is very simple, it looks great and the taste is even better! I guarantee everybody is gonna love it, if not, there is more left for you so it is a win win either way :)

  Variations
  • You can trade the walnuts with any other nut if you have a preference. You can even skip the nuts all together. 
  • Blueberries - Adding a1/4 cup of frozen blueberries to the batter right before baking, is another option. The tartness and sweetness of the blueberries compliments this cake tremendously.
  • White chocolate glaze - After baking the cake and cooling it down completely, You can cut even slices of the cake and glaze them with a vegan white chocolate and cocoa butter glaze. These are a nice even more festive idea for personal holiday desserts.


Pistachios

Pistachios are a great source of healthy fats, fiber, protein, antioxidants, and various nutrients, including vitamin B6 and thiamine. Plus, hey are absolutely delicious.


Walnuts
Walnuts are an excellent source of antioxidants and are significantly higher in Omega-3 fat than any other nut. 28 gram of walnuts have 2.5 grams of Omega-3 which is amazing. Plus, they are so crunchy and tasty when roasted.

Whenever I go in the kitchen, whether it is for cooking or baking, I need to have my music with me. I thought it would be nice to share with you the exact song that describes my feeling towards each recipe. That way you can have a similar experience while cooking...

This recipe is very festive and always gets me in the holiday spirit, that calls for  Lollipop by Chordettes  Purple Wildflour Vegan Bakery

Let's start:

Prep time: 15 min.
Baking time: 35 min.
Difficultysimple Servings: 2 loaves

 Instructions:
  1. Preheat the oven to 350 F.
  2. Sift all the dry ingredients together in a bowl until they are all well mixed (sifting the powders will help to prevent getting lumps).
  3. Pour the milk into a separate bowl, add the pistachio paste and use a hand blender to make sure they are well combined. Whisk well the rest of the  wet ingredients with the sugar until the sugar starts to dissolve. Add the powders mixture to the wet ingredients while still mixing. Finish combining the two mixtures using a rubber spatula. Stop mixing as soon as the mixture looks unified.
  4. Pour the batter into the loaf pans you prepared, filling it to about 3/4 of the pan's height. Place the walnuts on top of the batter. 
  5. Bake for at least 35 minutes until a toothpick comes out dry.
  6. Brush the top of the cake with a little bit of dates syrup or maple to give the walnuts a nice shine.
  7. Allow the cake to cool down completely before cutting it.
  8. Enjoy!
