Vegan Chocolate Fudge Cookies

One of the best cookies you’ll taste!.
The rich chocolate flavor and the moist fudgy texture makes for the perfect cookie to eat with your midday coffee, afternoon tea or any other time really ;)... The softness of the cookie makes it perfect to use as an ice cream cookie sandwich or a dark chocolate cream cookie sandwich like the one shown in the picture.
This cookie sandwich is for chocolate lovers who are really committed to their love, It is so rich with dark chocolate that it is almost bitter. My absolute favorite!
But I’m getting ahead of myself, this recipe is just for the cookie itself, It is sweet and soft, and you can choose whatever filling you want.

Variations

  • Chocolate fudge and natural peanut butter cookie sandwich, Just pipe a nice layer of peanut butter (or any other nut butter) in between the two cookies.
  • Ice cream cookie sandwich - these cookies are so fudgy that they would be perfect even straight out of the freezer.

 

Dark chocolate
I can write so many good things about dark chocolate, my personal opinion is very clear if you already know me :) I love it.
Now, as objectively as I can, I will write a little bit of important info about this amazing material
  • It is one of the best sources of antioxidants on the planet
  • 100 grams of Dark chocolate contains 11 grams of fiber 
  • Dark chocolate is rich in other nutrients, for example ,iron, magnesium, copper, and manganese
  •  It has been proven that consuming quality dark chocolate is linked to a reduction of heart disease
So, chocolate is amazing! Just make sure to choose quality dark chocolate and eat it in moderation!
 
Applesauce
Applesauce is used in this recipe as an egg replacer, It has a binding quality while still moistening the end product. It is one of the best option that we have in the vegan kitchen and I absolutely love using it. It is also packed with antioxidants and Vitamin C.

Let's start:

Prep time: 15 min.
Baking time: 12-15 min.
Difficultysimple Servings: 22 cookies

 Instructions:
  1. Preheat the oven to 350 F and line a baking sheet with baking paper.
  2. Melt the Chocolate and olive oil in a bowl on top of a pot with water (bain-marie), when the mixture is combined, remove from heat.
  3. Add vanilla, sugar, salt and the applesauce. Whisk together until everything is blended together. 
  4. Sift and mix the dry ingredients in a bowl. 
  5. Pour the wet ingredients into the flour bowl. Mix with a rubber spatula until well combined.
  6. Make sure the mixture is not hotter than room temperature and then add the chocolate chips.
  7. Allow the mixture to cool down in the fridge and firm up, make round balls with your hands  (25 g / 50 g for big cookie sandwich) and flatten them on the tray with your paw. Leave 1.5 inch space between the cookies. 
  8. Bake for 15 minutes and
  9. Enjoy!
