Vegan Tofu Scrambled "Eggs"


The best way to start the day, with this delicious plate of scrambled tofu, served with an avocado flower.
My son actually prefers this to pancakes, can you believe it?? 

This scramble is perfect on a slice of sourdough toast, or on a plate next to a fresh salad, however you like it.

Tofu is the most common source of protein in most vegan diets. Tofu is low in calories but high in protein and fat which make it a great substitute to use in main course dishes. It also contains many important vitamins and minerals, such as calcium, manganese, selenium, and iron.

Let's start:

Prep time: 10 min.
Cooking time: 10 min.
Difficulty: simple Servings6 servings
Tools: Ingredients:
  1. Drain the tofu well from any excess liquid.
  2. Place the tofu in the bowl and crumble it up, using a fork or your hands.
  3. Add the rest of the ingredients to the bowl and mix well.
  4. Heat the frying pan with a little bit of oil (the oil is not a must if working on a non-stick pan).
  5. Cook for 10-15 minutes on low heat, while stirring with the spatula, the moisture will slowly evaporate.
  6. Taste and fix seasoning according to taste.
  7. Remove from the stove when the tofu reaches your desired consistency.
  8. Enjoy!
