Vegan Crispy Asparagus
Baked breaded asparagus with garlic and sriracha dip
I have yet to find a person to say no to these crispy delights. If you are looking for a nice snack, or a special side dish to serve to your guests, try these out.
The tenderness of the roasted asparagus with the crunchiness of the breadcrumbs just makes me so happy! The wet batter that I use to stick the crumbs on to the asparagus is also the one giving the taste, so there are no extra unnecessary steps. It is a good, impressive, tasty and pretty dish that would make a nice addition to any feast.
Crispy asparagus are the new fries, you heard it here first! The only downside to this wonderful dish is that the only way to eat it is fresh from the oven. I mean, it really is not a problem because odds are you are not going to have left over since it's so good.
Notice this is not a dish you make a lot of because it doesn't perform as well when reheated.
Just eat it all the first time!
Asparagus
I love using asparagus because it is such a fun product to work with, I find it to be delicious and so versatile. Asparagus also has a lot of nutritional value. Asparagus is low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K.
Nutritional yeast
Fortified nutritional yeast is a great source of complete protein, B vitamins and other nutrients. Nutritional yeast contains high amounts of vitamin B12 and just consuming a small amount of it daily, helps prevent deficiency in vegans.
Whenever I go in the kitchen, whether it is for cooking or baking, I need to have my music with me. I thought it would be nice to share with you the exact song that describes my feeling towards each recipe. That way you can have a similar experience while cooking...

2 wide bowls

Ingredients:
Batter:

300 grams of fresh asparagus (1 bunch)
-
1 cup of water
-
2 tbsp low sodium soy sauce
-
1 tsp of mustard
-
1 cup of all purpose flour
Crust:
-
1.5 cups of bread crumbs
-
1/2 tsp salt
-
1 tbsp all purpose flour
-
1 tbsp of nutritional yeast

Crunchy breaded asparagus fries
Instructions:
-
Preheat oven to 400 F, Line a baking sheet with baking paper and spray your choice of oil on it ( I use an olive oil and sunflower oil blend).

Prepare the Asparagus - wash well and remove the hard base of the stem. If there are bad looking spots on the Asparagus, remove them.

Mix all the rest of the ingredients except for the bread crumbs and flour.

slowly add the flour to the wet ingredients and mix well. add flour until you reach the texture of a thick and sticky liquid. the mix should be sticky enough to cover the asparagus stem with a this layer, but not thick enough that there is a thick layer of batter on it.

Place the sticky mixture inn the wide bowl and place the asparagus in it.

Place the bread crumbs with the salt, a tbsp of flour and the nutritional yeast in the second wide bowl.

take a single asparagus, make sure it is well covered with wet batter, transfer to the breadcrumbs and then to the oiled sheet.

Repeat this process with all asparagus. spray the covered asparagus with a little bit of oil and put in the oven.

Bake for 15 minutes, take out of the oven, turn the asparagus over and spray them again. Put back in the oven for another 10 minutes.

Serve with your choice of dip. I serve it with a garlic and chipotle dip and half a lemon.
