Classic Matzah Brei (Matzah Pancake) for Passover
Passover is coming and with it all the traditional holiday food.
Some things never change. Ever since always, this simple Passover latkes were one of my favorite Passover foods. It is so so simple, it can be sweet or salty. It is crispy on the outside but soft on the inside... It has everything I like.
Now you can make them just perfect with this super easy recipe.

Matzah is simply unleavened bread. It is said to be one of the only foods the Israelites in Egypt were able to eat and take with them while escaping hastily from Pharaoh. In commemoration of that first Seder meal, and the haste in which the Israelites left Egypt, we eat matzah at the Seder and all through the holiday
Aquafaba is the name of the liquid left from cooking any type of legumes. The most common use, is aquafaba made from chickpeas, although beans aquafaba is very nice to work with. In the vegan kitchen, it is used as an egg whites substitute. In this recipe, it is used to combine the ingredients and hold them while cooking. The liquid is a simple combination of protein, starches, and vegetable gum. the percentage of protein is 10 times lower than that of egg white. reducing the aquafaba on low heat for long times will increase the protein percentage.

* Some people like to eat a sweet version of these latkes. For a sweet version, remove the spices from the recipe and add 1.5 tbsp of maple, 1/2 cinnamon and 2 tbsp of almond flour.
