This is one of my favorite recipes ever, the cake is so simple and yet, so unbelievably delicious and moist.
The spices give it that extra taste and aroma that pull this cake right to the top of my recommended baked goods list. A lot of people who tasted it, mentioned that this cake made them think of the holidays, I guess that has to do with the spices reminding a little bit of the essence of ginger bread treats…. That does not mean you can’t enjoy this lovely one all year long! :)

This recipe is one that I especially love thanks to the wonderful smell that fills the entire house. The baking makes a perfect Cinnamon haze, and the perfect song for that is Purple Haze by Jimi Hendrix
Prep time: 10 minutes
Baking time: 30 minutes
Servings: 2 loaves
Yields - 2 loaf cakes/1 8” cake

Preheat the oven to 350 F and spray oil on the pan.
Sift all the dry ingredients together in a bowl until they are all well mixed (sifting the powders will help to prevent getting lumps).
Whisk well the wet ingredients with the sugar until the sugar starts to dissolve. Add the powders mixture to the wet ingredients while still mixing and finish folding the whole batter with a rubber spatula. Stop mixing as soon as the mixture looks unified.
Smell the batter, How good is that fragrance right??....
Pour it to the pre-oiled pan you prepared. Decorate it if you want with some slivered white almonds (like in the picture).
Bake for at least 30 minutes until a toothpick comes out dry.
Pipe white chocolate after the cake is totally cooled down. (optional)
